Ingredients
๐พ 4 tbsps 50g brown buckwheat
๐ง 250 ml water
๐ง Pinch of sea salt

Instructions
1- Prepare Buckwheat:
- Wash the brown buckwheat under cold water to remove any impurities.
- Combine 3-4 tablespoons of washed buckwheat with 250 ml of water in a medium-sized stainless steel pot.
- Add a pinch of sea salt to the pot.
2- Cook Buckwheat:
- Place the pot over medium heat and bring the water to a boil.
- Once boiling, reduce the heat and let the buckwheat cook for about 15 minutes until all the water is absorbed and the grains are tender.
3- Fry Buckwheat:
- Preheat a black non-stick frying pan over medium heat and add a splash of olive oil.
- Transfer the cooked buckwheat to the frying pan.
- Lightly fry the buckwheat, stirring occasionally with a wooden spoon, until it begins to crisp and resembles the aroma of popcorn.
4- Cook Eggs:
- Crack two eggs directly into the pan alongside the crispy buckwheat.
- Continue frying until the eggs reach your preferred doneness; sunny-side-up is recommended.
5- Serve:
- Transfer the crispy buckwheat and eggs to a white round serving plate.
- Garnish with sliced avocado, cherry tomatoes, and greens as desired.
